Now who doesn't love to crack open a fortune cookie, both for the anticipation of a lucky fortune and a sweet and tasty treat. Celebrate National Fortune Cookie Day with your Family. There is no better way to remind the ones you love how special they are then in a fortune cookie! This recipe is quick, easy, inexpensive and delicious! Just the way we like it!
Ingredients
- 1 egg white
- 1/8 teaspoon vanilla extract
- 1 pinch of salt
- 1/4 cup unbleached all-purpose flour
- 1/4 cup white sugar
Directions:
- Mix the egg white and vanilla until foamy but not stiff.
- Then sift the flour, salt, and sugar and blend into the egg white mixture - The batter should be just a little bit runny.
- Grease up a cookie sheet.
- Place teaspoons of batter onto the cookie sheet and using the back of the spoon to spread thin.
- Bake in the oven at 350 degrees for about 3-5 minutes or until the edges of the cookie are browned.
- Using a metal spatula, quickly remove cookies carefully. Place the fortune in the middle of the cookie and fold in half.
- Using the side of a soup bowl or mug, place the center of the cookie at the rim, bend it in to form shape and leave to cool - As it cools it will harden!

Interesting note: It seem that a search for National Fortune Cookie Day shows being celebrated on two different dates, in addition to September 13th, it's also Celebrated on July 20th, no idea which one is correct the results were about 50 / 50, so why not just celebrate both date, twice the fortune cookies are twice as delish!
