My kids and husband are absolutely crazy about Bananas and I found this cool recipe a few weeks ago that I have been making once a week for snacks. I get about 24 bars out of this recipe and it usually lasts us the entire week.
Ingredients:
- 5 very ripe bananas
- 3/4 cup brown sugar
- 1/4 cup canola oil
- 1/4 cup milk
- 2 eggs, beaten
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 cups mini chocolate chips. separated by one cup each
How to:
- Heat oven to 350 degrees F.
- Spray a 10x13 pan with non-stick spray and set aside
- In a small bowl add flour, baking soda, salt and cinnamon and whisk together, then set aside
- Peel bananas and mash well by hand and then set it to be mixed in your mixer until liquidy
- Using your mixer on medium setting add in brown sugar, oil, milk and eggs until combined.
- Add in bowl with flour and mix well until well blended.
- Remove from mixer and fold in 1 cup of chocolate chips using a spatula
- Pour the batter into the prepared pan
- Use the second cup of chocolate chips and sprinkle on top of your pan
- Bake for 18-22 minutes, until a wooden toothpick inserted in center comes out clean.
- Cool completely and cut into squares.
