New Year's Eve Kid-Friendly DIY Champagne Cupcakes

A Family Favorite Your Kids will Love to Make every Year to Celebrate the New Year

Are you looking for a fun way to help your kids Ring in the New Year? How about treating them to . . . some Champagne!? No, not a glass of the bubbly, but how about some . . . tasty kid-friendly Champagne cupcakes for New Year's?! 

You could make these as a special treat or better yet have your children help you make them. They are super easy to make and they're a favorite of our previous publisher as you can see below.

Many years ago I was a huge fan of a foodie blog where they showed you how to make different desserts. One of the recipes I discovered was Champagne Cupcakes which we make only on New Year's Eve, and the kids adore them so much. My friends love them too and have started making them as well, so I thought I would share them with Macaroni KID families. This is a huge favorite for New Year's Eve, we have been making them for many years, they are a big treat for the whole family and a kid-friendly way for the kids to taste Champagne.

When I tried to find the original blog I discovered it no longer exists but YouTube saves everything forever so here is the video of how to make the cupcakes from the blog. I typed up the instructions for you, so if I got something wrong please forgive me and watch the video instead.

A stand mixer works great and will make mixing easier, if you don't have one you can use a hand-held mixer or a bowl and spoon will work just fine. If kids are helping ask them to gather all the ingredients, then they can help you measure.

Champagne Cupcakes Ingredients: 

  • 2 cups granulated sugar 
  • 3 cups all-purpose flour 
  • 1 tablespoon baking powder 
  • 1/2 teaspoons salt 
  • 1 cup butter - room temperature cut into cubes
  • 4 eggs 
  • 1 cup Champagne 
  • 1 teaspoon vanilla extract

Cupcake Instructions

  1. Preheat oven to 350 F 
  2. Mix dry ingredients: flour, sugar, baking powder and salt
  3. Add the Butter cubes one at a time until they are incorporated and the batter is grainy like sand with no butter chunks
  4. Add the eggs - mix well
  5. Add the vanilla - mix well
  6. Slowly add Champagne - mix well
  7. Line your cupcake tin with paper liners - get as fancy as you like
  8. Fill the cups with equal amounts of batter using a 3 tbsp. scoop or spoon
  9. Bake for about 20-22 minutes
  10. Remove from oven and let cupcakes sit in the pan for about 5 minutes to cool
  11. Remove cupcakes from pan and finish cooling on a cooling rack

While your waiting you can start to make the Frosting. Keep an eye on those kiddos, they'll sneak a taste when you're not looking, lol. If you have a piping bag & tip you'll want to use it for the frosting.

Macaroni Tip: If you don't have a piping bag and tip you can use a plastic zip bag, add the icing close bag and snip off a corner then gently squeeze it onto the cupcakes - see video below for how to.

Champagne Buttercream Ingredients: 

  • ½ cup butter softened
  •  3 cups powdered sugar 
  • 3-5 tablespoons Champagne 
  • Decorations - get creative with shiny sprinkles or colorful sugars

Buttercream Instructions

  1. Cream butter till fluffy
  2. Add 1 cup powdered sugar and mix well
  3. Add 1 tablespoon Champagne and mix well
  4. Add 1 cup powdered sugar and mix
  5. Add 1 tablespoon Champagne and mix well
  6. Scrape the sides of the bowl and continue mixing
  7. Add the rest of the powdered sugar
  8. Add 1 tablespoon Champagne and mix well
  9. Scrape the sides of the bowl again and continue mixing
  10. If the buttercream is too stiff add another tablespoon of Champagne and mix well
  11. If you are happy with your icing texture, you are ready to decorate, if its too stiff, add another tablespoon of champagne and mix.
  12. Ice your cupcakes - you can use a piping tool if you like
  13. Add your sprinkles and any other decorations
  14. They are ready to eat - mmm

Make these as fancy or as fun as you like! Change it up and try "pink" Champagne!
