Need a breakfast you can make once and grab all week? These easy egg muffins are packed with protein, easy to customize with your family's favorite ingredients, and a great way to use up whatever vegetables, cheese, or cooked meat you have on hand. Best of all, they're ready to eat straight from the refrigerator.
Between getting everyone dressed, fed, and out the door on school mornings, having breakfast already made can make the morning a whole lot easier. Egg muffins are also easy to eat on the go, whether you're walking to school or grabbing breakfast in the car when you're short on time.
And don't limit them to breakfast! Keep a batch in the refrigerator for a protein-packed afternoon snack before soccer practice, dance, gymnastics, or whatever comes next on your family's busy schedule.
🥚 Egg Muffins
Makes 12 egg muffins. Depending on your family size and how quickly they disappear, you may want to double the recipe to have plenty for the week.
Ingredients:
- 12 large eggs
- Shredded cheese, any variety or combination
- Chopped ingredients of your choice.
Make Them Your Own
One of the best things about egg muffins is how easy they are to customize. Use your family's favorite ingredients or whatever you happen to have in the refrigerator.
You can make the whole batch the same or create different combinations so everyone gets a favorite.
- Vegetables and greens: spinach, kale, mushrooms, tomatoes, onions, or any color bell pepper
- Cheese: cheddar, mozzarella, Monterey Jack, parmesan or your favorite shredded cheese
- Fresh herbs: parsley, basil, or other fresh herbs
- Seasonings: Try adding your favorite herbs and spices to change up the flavor.
- Meat and protein: cooked bacon, sausage, or ham
You can also add toppings before baking, such as:
- A sprinkle of breadcrumbs for a little crunch
- Extra shredded cheese
- A thin slice of tomato
- Cooked bacon, sausage, or ham
- Chopped fresh herbs or a little green garnish
Think of them like mini omelets - there's really no wrong combination!
Directions:
- Preheat the oven to 350°F.
- Prepare the muffin tin with nonstick cooking spray, or use silicone, paper or parchment muffin liners for easy removal and cleanup.
- Sprinkle shredded cheese into the bottom of each muffin cup.
- Add your chopped ingredients. Make sure any meat is fully cooked before adding it.
- Crack one egg into each muffin cup and gently stir with a fork to break the yolk and combine the ingredients.
- Top with additional shredded cheese if desired.
- Bake for 15–20 minutes, or until the eggs are set.
